Guinness® Chocolate Cake

Ingredients for the Cake

1 cup Guinness®

1/2 cup plus 1 Tablespoons butter

1/2 cup cocoa

2 cups superfine sugar

3/4 cup sour cream

2 eggs

1 Tablespoon real vanilla extract

2 cups all-purpose flour

2 -1/2 teaspoons baking soda

Ingredients for the Icing

8 ounces cream cheese at room temperature

1-1/4 cup powdered sugar

1/2 c heavy cream

Preheat oven to 350; grease a 9-inch spring form pan and line with parchment paper.

Pour the Guinness® into a large saucepan and add the butter. Heat until the butter is melted and remove from the heat. Whisk in the cocoa and sugar. In a separate bowl, beat the sour cream with the eggs and vanilla. Combine the mixtures and beat in flour and baking soda.

Pour the batter into the greased and lined spring form pan and bake at 45 – 55 minutes. (Check for doneness with a toothpick) Cool completely.

When cake is cool, beat together the cream cheese and powdered sugar until well blended. Add the cream, slowly beating until all the cream is incorporated and the icing is spreadable. Frost just the top of the cake, using a spatula to pull the icing into soft peak so that it resembles a frothy head.
