Pumpkin Seed Recipe

 1. Mexican Spiced Pumpkin Seeds

Two cups pumpkin seeds (purchased pepitas or rinsed and dried from your own pumpkin)

2 Tablespoons fresh lime juice

1 teaspoons chili powder

½ teaspoon cayenne

1 Tablespoon jalapeno salt

Heat oven to 350, toss dried seeds with 1 teaspoon vegetable oil. Stir in remaining ingredients.

Roast seeds about 15- 20 minutes. Stir every 5 minutes until browned and crisp.

Remove from oven and toss with 1 tablespoon jalapeno salt. (May be purchased online at http://www.etsy.com/listing/118270313/texas-jalapeno-salt)

 

2. Fall Harvest Candied Pumpkin Seeds

Two cups pumpkin seeds (purchased pepitas or rinsed and dried from your own pumpkin)

¼ cup butter, melted

1 teaspoon ground cinnamon

¼ teaspoon ground nutmeg

2 Tablespoons dark brown sugar

Heat oven to 350, toss dried seeds with all ingredients. Roast seeds about 30-35 minutes. Stir every 5 minutes until browned and crisp.

Remove from oven and toss with 1/2 salt
