Croque Madame


  • 8 slices sourdough bread, buttered on one side
  • 8 ounces Gruyere cheese, 1/16 inch slice
  • 12 ounces Black Forest Ham, 1/16 inch slice
  • Whole grain mustard
  • 4 large eggs, fried
  • Salt & pepper to taste


Fry the eggs in small pat of butter until whites are cooked but yolk remains liquid, set aside.

Set 4 slices of bread, butter side down, in pan.

Layer the cheese and ham evenly.

Spread the mustard on the other side of remaining 4 slices of bread; place on sandwiches, butter side up.

Grill in skilled until golden brown on both sides.

Top each sandwich with the fried egg and serve immediately

Serves 4
