Grown-Up Grilled Cheese for 2


  • 4 thick slices of your favorite rustic-styled bread
  • 4 slices Havarti cheese
  • Goat Cheese
  • Prosciutto, very thinly shaved
  • Butter, room temperature
  • Pesto, about 2 Tablespoons
  • 1/4 of an onion, grilled


Thinly slice 1/4 of an onion. Sautee onions in olive oil until they are caramelized. Set aside

Spread butter on one side of both bread slices. On one slice, spread with about 1 Tablespoon pesto; on the other 1 Tablespoon of the Goat cheese.

Heat skillet and add 1 Tablespoon butter. Place the slice with goat cheese, butter-side-down in pan.

Layer the prosciutto, arugula, onion and Havarti, on top of the goat cheese. Top with pesto slice of bread, butter-side-up.

Cover, and heat sandwich on low until lightly browned; turn and brown the other side.

Remove from pan and let sit for a few minutes then serve while still hot.
