Sour Cream Pumpkin Loaf


  • 1/2 cup butter, room temperature
  • 3/4 cup light brown sugar
  • 2 eggs
  • 2 teaspoons real vanilla extract
  • 1-1/2 cups flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 -1/4 cup organic pumpkin (1 15 oz can)
  • 1/2 cup sour cream
  • 1 tablespoon cinnamon
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground cloves


Cream the butter and sugar together in a large mixing bowl. Stir in the eggs and vanilla. Add flour, baking soda, and salt. Mix well. Add the pumpkin, sour cream, and spices. Stir.

Bake in a greased loaf pan at 350 degrees for about one hour or until an inserted tooth pick comes out clean. Cool in pans on rack about 10-15 minutes. Turn out on racks, right side up and cool completely.
