Almond Pear Cobbler Recipe

Ingredients

  • 5 ripe pears, peeled, cored and sliced, about 5 cups
  • 1/4 cup slivered almonds
  • 1/2 cup sugar
  • 2 tablespoons all-purpose flour
  • 1 vanilla bean, sliced and scraped
  • 3/4 teaspoon ground cinnamon
  • 1/4 teaspoon table salt
  • 4 tablespoons unsalted butter, softened, divided

Topping:

  • 1/2 cup self-rising flour
  • 1/4 cup sugar
  • 1/4 teaspoon salt
  • 1 egg, beaten

Directions

Preheat the oven to 350°F. Butter a 9 by 9-inch baking dish.

In a large mixing bowl stir together the pears, almonds, sugar, flour, vanilla bean, cinnamon, salt, and 2 tablespoons of the butter. Reserve and do not rinse bowl.

Add almond-pear mixture to the prepared baking dish and dot with the remaining 2 tablespoons of butter.

In the reserved mixing bowl, combine flour, sugar, salt, and egg. Mix until well blended scraping the sides to collect juices. When combined, drop the topping onto the almond-pear mixture and top with remaining two pats of butter. Bake until the crust is golden and the fruit is tender about 30 to 40 minutes.

Serve with ice cream.
