Spiced Fresh Peach Pie


1 batch pie crust (2 crusts)

5 to 6 cups peeled and sliced fresh peaches (see tip below)

1/4 cup dark brown sugar

1/4 cup sugar

1 teaspoon lemon juice

1/2 teaspoon high quality ground cinnamon like korintje

1/4 teaspoon ground nutmeg

1/8 teaspoon ground cardamom

1/8 teaspoon salt

1/2 teaspoon vanilla extract

3 tablespoons cornstarch

3 tablespoons butter


Preheat the oven to 350°F.

Roll out the pie dough into two circles and place the bottom crust in the pie pan.

Toss the peaches with the sugars and lemon juice in a large bowl.

Add the spices and vanilla and corn starch. Stir to coat the peaches.

Pour the peaches into the bottom piecrust. Dot with butter.

Add the top crust and make slits for the steam to escape.

Bake for 35 to 45 minutes, until the crust is golden brown and the filling is bubbling.


Tip: You can peel the peaches as they are, or blanch them in hot water for 30 to 40 seconds, then put them in a bowl of cold water to cool before peeling.
